Kinetics of Cane Sugar Inversion

Introduction:

When a chemical reaction occurs, its speed depends on the amounts of reactants present in a certain manner called a rate law. How do we know what is the rate law for a particular reaction. How do we measure speeds? We need to monitor distinguishable properties of the reactants to follow a reaction in time. Optical activity is one such remarkable property that can be used if the molecular structure of a reactant is asymmetric. Cane sugar is such a molecule.
